Sodium Bicarbonate is used sometimes when brewing darker beers. It is used for increasing Residual Alkalinity in the brewing water as well as raising the mash pH – add accordingly to either to the brewing water or the mash.

Also used by distillers to buffer the pH of a high sugar wash.
